Here you go – easy to make and great to eat or have as hors d’oeuvres

 2 eggs hard cooked

1 T. mayonnaise

2 T. minced green onions

2 slices cooked ham, finely chopped

½ tsp prepared mustard

Salt & Pepper to taste

Green onion to garnish

Cut eggs in half – lengthwise and remove the yolks.

In small bowl mix yolk and remaining ingredients – except whites until well blended

Stuff whites with mixture and garnish with green onions.

Ok I call this a “Corned Beef Skillet”

Half a can of Corned Beef (Must be canned)

2 cups of Macain’s Hashbrowns

Marg or Butter

2 large Eggs

Ok I throw the marg and hashbrowns in a frying pan …..cook them half way….then add in the half can of corned beef …..fry for about 2-3mins (until a little crispy) them I break the 2 eggs on top …then add a lid to the frying pan……Voila! 3 mins later for soft eggs – 5 mins later for harder eggs

One of my all time favorite recipes is one we use while camping in the motorhome.  This way we can use the cast iron skillet
or at home you can use a regular pan.  This can be done inside on a regular stove or on the campfire.
You can change the ingredients, but the cast iron pan makes the whole meal taste so good....
 
 FARMERS VEGETABLE OMLET
 4 Slices Bacon                                    1/2 Cup Chopped Onion
1 Cup Julienne Green Pepper                8 Eggs
2 Cups Sliced Cooked Potatoes            2 Tbsp Parmesan Cheese
1 Tbsp Chopped Parsely                       1tsp.    Basil
 
 In large heavy skillet, fry bacon.  Drain bacon.  Add pepper and onion to pan drippings.
Add potatoes, stir gently.   In med bowl, beat eggs with remaining ingredients.
Cover, simmer over low heat for 20 to 25 minutes.
